Swiss Pancakes

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the batter

  1. Beat the eggs in a bowl.

  2. Add sugar and milk to the eggs and stir until smooth.

  3. Gradually mix in the flour until well combined.

Bake and serve

  1. Grease some saucers and pour the mixture into them.

  2. Bake in a 400°F (200°C) oven for 15 to 20 minutes.

  3. Turn the pancakes out onto a hot dish.

  4. Place a little jam in the center of each pancake.

  5. Fold the pancakes over.

  6. Sift a little sugar over the folded pancakes.

What each ingredient does

Eggs
Bind the batter and help set the pancakes as they bake.
Flour
Provides structure so the batter sets into a sturdy pancake.
Milk
Adds moisture and loosens the batter to a pourable consistency.
Sugar
Adds sweetness and helps the pancakes brown lightly in the oven.
