What each ingredient does

Rhubarb
Provides the main flavour and tartness, and its juice forms the base syrup.
Loaf sugar
Sweetens the syrup and helps it reach a clear, set-ready consistency.
Cream
Adds richness and body, whipped to hold air that gives a light texture.
Gelatine
Sets the mixture into a firm, sliceable shape as it cools.

The step that matters

Whisking the cream and adding the syrup. Whisk the cream only until stiff, then stir in the syrup while the gelatine is still liquid and cooling. If the mixture sets before it is folded and poured, lumps of gel form and the cream loses its light texture. Stirring gently keeps the air in the cream.

Swap the rhubarb

How well each one fits the dish's main ingredients (sugar, cream):

  1. Nutmegfits better
  2. Cinnamonfits about as well
  3. Rhubarbthe original
  4. Gingerfits less well

Fit is the average pairing score against sugar, cream. Candidates are from the same food group and used in at least 100 recipes.
