What each ingredient does

Veal
Provides the main body of meat whose juices and collagen build the gravy's richness.
Ham
Adds savory, salty flavor to the stock as it reduces and browns on the pan base.
Broth
Supplies the liquid that reduces and carries flavor into the finished gravy.

The step that matters

Reducing and glazing the meat. Slow reduction over gentle heat lets the meat juices concentrate and caramelize into a deep amber glaze. Too much heat or too little stirring can scorch the bottom of the pan and make the gravy bitter.

Swap the mace

The recipe marks mace as optional. How well each one fits the dish's main ingredients (ham, veal, meat, parsley, mushroom, onion, celery):

  1. Thymefits better
  2. Marjoramfits better
  3. Garlicfits better
  4. Macethe original

Fit is the average pairing score against ham, veal, meat, parsley, mushroom, onion, celery. Candidates are from the same food group and used in at least 100 recipes.
