Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Melted butter
Provides fat and richness, carrying the flavours and giving the sauce a smooth, silky texture.
Essence of anchovies
Adds a salty, savoury depth that rounds out the sauce.
Cream
Adds richness and a smoother, more velvety body to the sauce.
Lobster flesh
Supplies the main seafood flavour and tender pieces of meat to the sauce.

The step that matters

Do not let the sauce boil again. Once the lobster goes in, boiling can toughen the delicate protein and make it rubbery, and a dairy-based sauce can separate or turn grainy. Gentle heat only keeps the lobster tender.

Swap the mace

How well each one fits the dish's main ingredients (butter, pepper, cream, lobster):

  1. Nutmegfits better
  2. Tarragonfits better
  3. Parsleyfits better
  4. Macethe original

Fit is the average pairing score against butter, pepper, cream, lobster. Candidates are from the same food group and used in at least 100 recipes.
