Why it works: Horseradish and cucumber match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 640 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Ingredients

Directions

  1. Preheat your grill or broiler.

  2. Place the steaks on the grill and cook for 8 to 10 minutes, turning them only once.

  3. If desired, rub a cut raw eschalot on the dish before adding warmed mushroom catsup.

  4. Optionally, place thin slices of fresh butter under the steaks to melt into the gravy.

  5. Serve immediately with your choice of sauces.
