  2. If desired, lard the liver with bacon or wrap it in buttered paper.

Roast

  1. Roast the liver for 1 to 1¼ hours, basting constantly.

  2. Remove the paper.

  3. Froth the liver for 10 to 15 minutes before it's done.

Make the gravy

  1. Trim small bits of liver.

  2. Flour the trimmed bits.

  3. Fry the floured bits with sliced onion.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Calf's liver
Forms the main body of the dish, becoming firmer and less tender as it cooks.
Butter
Adds richness and helps the surface brown during roasting.
Onion
Softens and sweetens as it fries, adding aroma to the gravy.
Bacon
Adds fat and seasoned flavour to the liver as it roasts.

The step that matters

Roast the liver for 1 to 1¼ hours, basting constantly. Liver is lean and its proteins tighten quickly with heat, so overcooking makes it dry and grainy. Basting keeps the surface moist while the inside cooks through gently.

Swap the lemon

The recipe marks lemon as optional. How well each one fits the dish's main ingredients (liver, pepper, butter, onion, vinegar, thyme):

  1. Lemonthe original
  2. Limefits about as well
  3. Plumfits less well
  4. Cherryfits less well

Fit is the average pairing score against liver, pepper, butter, onion, vinegar, thyme. Candidates are from the same food group and used in at least 100 recipes.
