To Bake a Ham

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Soak the ham in plenty of cold water overnight.

  2. The next day, soak it in warm water for an hour, then wash it clean and trim off any rusty parts.

  3. Place the ham rind-side down in a large pie dish.

  4. Cover it with oiled paper and secure a thick layer of coarse paste around the edges.

  5. Bake in a preheated oven at 350°F (175°C) for 3 to 5 hours, depending on the size of the ham.

  6. Remove the crust and skin while the ham is still hot.
