What each ingredient does

Onions
Pounded onions thicken the sauce and add body, while sliced fried onions add sweetness and browning.
Mutton or other meat
Forms the main substance of the dish, becoming tender through long gentle simmering.
Butter
Carries the fat for frying the onions and adds richness to the sauce.
Gravy
Provides the cooking liquid that moistens the spices and softens the meat.

The step that matters

Stew the spice base without burning. Pounded onions and spices scorch easily over direct heat, and scorched solids turn bitter and dark. Keeping the heat gentle and stirring lets the onions soften and the spices bloom evenly before the liquid and meat are added.

Swap the onion
