What each ingredient does

Mushrooms
Form the main body of the dish and release moisture that becomes part of the sauce as they stew.
Butter
Carries the mushroom flavour and fries the bread to a golden, rich finish.
Flour
Thickens the cooking juices into a smooth sauce as it cooks with the butter.
Gravy or beef broth
Provides the liquid base and savoury depth for the mushroom sauce.
Bread
Forms the crisp, absorbent base that holds the mushroom sauce.

The step that matters

Stew the mushrooms and brown the flour. Cooking the mushrooms gently until they release and reabsorb their liquid concentrates their flavour. Browning the flour in butter removes raw starch taste and gives the sauce colour and body before the liquid is added, so it thickens smoothly without lumps.

Swap the mace

How well each one fits the dish's main ingredients (mushroom, butter, pepper, flour, beef, lemon, bread):

  1. Thymefits better
  2. Parsleyfits better
  3. Marjoramfits better
  4. Macethe original

Fit is the average pairing score against mushroom, butter, pepper, flour, beef, lemon, bread. Candidates are from the same food group and used in at least 100 recipes.
