Why it works: Chicken and mushroom are a kitchen classic. They rank in the top 4% of all ingredient pairs, and cooks put them together in 4,172 recipes. Both carry 1-butyl acetate, which smells fruity, banana. The science ↓
Excellent Meat Rolls
Ingredients
Directions
The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.
Prepare the filling
Pound the veal and chicken together as for potting.
Make forcemeat according to the recipe in Chapter VI.
Form the forcemeat into small rolls, no larger than a finger.
Wrap and bake
Wrap the pounded meat around each roll, moistening with 1 teaspoon of water.
Fold the rolls in puff pastry.
Bake at 400°F (200°C) for 15 to 20 minutes, or until the crust is perfectly done.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

What each ingredient does
- Half-roasted veal
- Provides the main meaty body and flavour of the filling, pounded smooth to bind with the forcemeat.
- Chicken or turkey
- Adds tender, mild meat that softens the filling and helps it hold together when pounded.
- Puff pastry
- Its many thin layers puff and crisp in the hot oven, forming a flaky, golden wrapper.
- Forcemeat
- Gives the rolls a soft, fine texture and moisture that keeps the filling from drying out.
The step that matters
Bake at 400°F until the crust is perfectly done. Puff pastry relies on steam from its butter layers to rise and crisp. Too low a heat makes it greasy and pale, while over-baking dries the filling and darkens the crust too far.
