What each ingredient does

Mushrooms
Main ingredient that is preserved and later rehydrated and softened in warm water.
Salt
Draws moisture out and seasons the mushrooms, helping preserve them in the brine.
Salad oil (in the method)
Forms a layer on top of the brine that helps shut out air from the mushrooms.

The step that matters

Skim off any scum, then add the mushrooms and boil gently for 5 minutes.. Scum left on the surface can carry impurities into the brine, and a gentle boil cooks the mushrooms without breaking them apart.

Swap the mace
