Ingredients

Directions

Make the sauce

  1. Beat the butter to a cream.

  2. Gradually add the butter to the pounded yolks until smooth.

  3. Slowly incorporate the salad oil until fully blended.

  4. Add a small amount of coarse sea salt and vinegar to taste.

Assemble and garnish

  1. Carve the boiled fowls neatly and trim the joints.

  2. Layer the inferior parts on a large plate and spread thick sauce over them.

  3. Arrange the joints symmetrically over the sauce.

  4. Build a pyramid with the fowl and decorate with egg whites and halved lettuce hearts.

  5. Place boiled eggs around the base, cutting a small slice from the large end of each.

What each ingredient does

Egg yolks
Emulsify the oil and butter, giving the sauce its smooth, thick body.
Salad oil
Supplies most of the fat, which thickens into a rich, stable sauce as it is blended in.
Butter
Adds richness and a creamy texture to the sauce.
Vinegar
Adds acidity that sharpens the flavour and balances the richness of the fat.

The step that matters

Adding the oil slowly. Oil must be incorporated gradually into the yolks so the emulsion forms. Adding it too fast makes the sauce separate and turn oily instead of thick and smooth.

The recipe marks lemon as optional. How well each one fits the dish's main ingredients (butter, egg, vinegar, pepper, lettuce):
