Why it works: Turbot and sauce match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 248 recipes. Both carry ethanol, which smells alcoholic, ethereal. The science ↓
Turbot and Brill
Ingredients
Directions
The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.
Preheat the oven to 350°F (175°C).
Simmer the turbot in the oven for about 45 minutes, basting every 5 minutes.
Drain the turbot and let it cool, reserving the cooking liquid.
Mix the reserved liquid with Parisian sauce for garnishing.
Place the cooled turbot on a buttered baking sheet and spread with a thin layer of reduced Allemande sauce.
Sprinkle with finely sifted bread crumbs and moisten with consommé and wine.
Bake for 20 minutes until warmed through.
Gently slide the turbot onto a serving dish and garnish with Parisian sauce.
Decorate with crayfish tails, mussels, oysters, button mushrooms, and truffles tossed in glaze.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
