What each ingredient does

Pigeons
Provide the main meat, which stays tender and juicy when cooked briefly in paper.
Butter
Adds richness and helps brown the pigeons and mushrooms in the pan.
Mushrooms
Add earthy savour and moisture to the filling as they cook down.
Shallots
Add a mild, sweet onion-like aroma to the filling.
Attemande sauce
Binds the filling with a creamy, savoury body that stays in the paper.
Lemon juice
Adds acidity that brightens the rich butter and mushroom flavours.

The step that matters

Partially cool the sauce before wrapping. If the filling is still hot, it can loosen the paper seal and make the pigeons cook unevenly, while cooling it partially keeps the sauce thick enough to stay in the parcel.

Swap the nutmeg

How well each one fits the dish's main ingredients (pepper, butter, mushroom, parsley, shallot, sauce, lemon):

  1. Thymefits better
  2. Tarragonfits better
  3. Capersfits better
