What each ingredient does

Onions
Break down during long cooking to give the soup its sweet, savory body.
Browned flour
Thickens the stock so the soup has body and a smooth, rich texture.
Clarified fat
Carries flavor from the ham and onions and browns the vegetables.
Stock
Forms the liquid base of the soup and carries all its flavor.

The step that matters

Stir the onions until browned. Browning the onions in fat develops deep, roasted flavor through the Maillard reaction and caramelization. Pale onions give a flat, watery-tasting soup.
