Why it works: Carrot and celery match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 10,173 recipes. Both carry myristicin, which smells spice, warm. The science ↓
Kidney Soup
Ingredients
Directions
Prepare
Wash the kidney and remove the core.
Slice the kidney and rinse quickly in vinegar and water, then dry well.
Make the soup
In a stew-pan, heat the fat.
Add the kidney and vegetables; brown them all over.
Add the cold stock.
Skim off the fat.
Bring the mixture to a slow boil.
Add salt.
Cover the pot.
Boil for 1.5 hours.
Strain the soup through a sieve, pressing the kidney to extract flavor without letting it pass through.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Ox kidney
- Provides the main meat and rich, savory flavor of the soup.
- Stock
- Forms the liquid base in which the kidney and vegetables cook and soften.
- Brown roux
- Thickens the soup and adds a toasted, nutty color and flavor.
- Sherry
- Adds acidity and a lightly sweet, aromatic depth to the finished soup.
The step that matters
Browning the kidney and vegetables. Searing in hot fat creates browned flavors through the Maillard reaction. Crowding the pan or skipping the browning leaves the soup flat and pale in flavor.

How well each one fits the dish's main ingredients (carrot, celery, pepper, sherry, butter):
- Capsicumfits better
- Parsnipfits about as well
- Turnipfits about as well

Fit is the average pairing score against carrot, celery, pepper, sherry, butter. Candidates are from the same food group and used in at least 100 recipes.
