What each ingredient does

Pheasant breasts
Form the main sliced meat layers that carry the cutlet's body and bite.
Foie gras
Melts into the farce and adds richness and a silky, buttery texture.
Raw egg yolk
Binds the farce so it holds together around the pheasant slices during cooking.
Hard-boiled egg yolk
Adds body and a crumbly richness to the farce, helping it spread smoothly.
Butter
Enriches the pounded pheasant meat and adds fat for a tender, moist texture.
Sherry
Adds acidity and aromatic depth to the brown sauce.

The step that matters

Braise in stock until nearly done. Cooking too long dries out the lean pheasant, while stopping too early leaves the farce raw. Gentle, moist heat keeps the meat tender before the final oven finish.

Swap the celery

How well each one fits the dish's main ingredients (pheasant, butter, meat, egg, sauce, sherry, mushroom):

  1. Thymefits better
  2. Capersfits better
  3. Nutmegfits better
  4. Celerythe original
