Veal Escalopes with Celery Sauce

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Use cooked veal instead of mutton as directed in Mutton Escalopes A LA SouniSE.

  2. Spread celery sauce over the veal slices.

  3. If available, mince leftover stuffing and mix it with the sauce for added flavor.

  4. If no stuffing, add a pinch of sweet herbs and minced cooked bacon to the sauce.

  5. Place the veal on a serving dish and add a puree of celery in the center.

  6. Pour enough thick béchamel over the puree to cover it completely.

  7. Smooth the béchamel, then sprinkle with grated Parmesan cheese and bread crumbs.

  8. Dot with butter and brown in a 400°F (200°C) oven or under a salamander.
