Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Calf's head
Provides the main body of meat, which becomes tender through long simmering.
Cream
Adds richness and a smooth, mellow texture to the curry sauce.
Onion
Browns in butter to add sweetness and savory depth to the sauce.
Apple
Softens as it cooks, adding mild sweetness and balancing the curry's heat.

The step that matters

Simmering the meat in the sauce. Simmering gently keeps the meat moist and tender. Boiling hard can toughen proteins and break the sauce, so keep the heat low and steady.

Swap the apple

How well each one fits the dish's main ingredients (cream, meat, sauce, onion, pepper):

  1. Avocadofits better
  2. Limefits better
  3. Coconutfits better
  4. Applethe original
