Why it works: Lemon and pepper match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 27,047 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓

Calf’s Liver, Baked

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Wash and dry the liver.

  2. Cut slits in the liver half an inch apart and insert strips of fat pork.

  3. Season with sweet herbs and grated lemon peel.

  4. Flour the surface and pepper it well.

Bake and serve

  1. Bake in a 350°F (175°C) oven, basting occasionally with stock and brushing with oil or butter.

  2. When nearly done, remove the bacon and sprinkle with breadcrumbs.

  3. Brown the surface nicely and serve with gravy or sauce.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Calf's liver
Forms the main body of the dish, giving it its rich, firm, meaty texture when baked.
Fat pork
Adds fat that melts into the liver during baking, keeping it moister and adding flavour.
Flour
Coats the surface so it browns well and helps form a light crust.
Stock
Used for basting, adding moisture and savoury flavour as the liver bakes.
Fat bacon
Lays fat over the liver, basting it and adding savoury flavour while it cooks.

The step that matters

Basting and timing the bake. Liver is lean and dries out quickly in a hot oven. Regular basting with stock and oil or butter keeps the surface moist, while removing the bacon near the end lets the surface brown properly without overcooking the interior.

Swap the lemon

How well each one fits the dish's main ingredients (liver, pork, flour, pepper, butter):

  1. Lemonthe original
  2. Applefits about as well
  3. Limefits less well
  4. Plumfits less well

Fit is the average pairing score against liver, pork, flour, pepper, butter. Candidates are from the same food group and used in at least 100 recipes.
