Fowl, Galantine

Ingredients

Directions

Prepare

  1. Prepare the fowl as directed in Fowl, Boned AFTER Opening.

  2. Draw the wings and legs inside and cut off the pinions.

  3. Flatten the fowl, trimming some meat from the legs to fill the thin parts.

  4. Make a forcemeat by mixing veal and ham or sausage meat.

  5. Spread the forcemeat over the fowl in a layer ½ inch thick.

  6. Add strips of cooked ham, tongue, pistachios, and truffles or hard-boiled eggs for decoration.

Roll and cook

  1. Roll the fowl up tightly like a pudding and wrap it in a buttered cloth.

  2. Twist and tie the ends of the cloth securely.

  3. Place the wrapped fowl in stock and cook gently for several hours.

Cool and serve

  1. After cooking, tighten the cloth and place weights on it to cool.

  2. Remove stitches from the back before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Fowl
Forms the main body of the galantine and provides the meat that is rolled, cooked and sliced.
Veal
Forms a minced forcemeat layer that holds the filling together and keeps it moist.
Ham or sausage meat
Adds fat and savory flavor to the forcemeat, keeping the filling moist during cooking.
Eggs
Add a firm, set texture and decorative slices inside the rolled fowl.

The step that matters

Rolling and tying the fowl tightly. A tight, even roll with a securely tied cloth keeps the layers compact and the filling in place. Loose wrapping lets the forcemeat shift or escape during the long gentle simmer, and uneven pressure gives an uneven slice.
