Why it works: Onion and mustard match in chemistry and in kitchens. They rank in the top 6% of all ingredient pairs, and cooks put them together in 9,259 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Ingredients

Directions

The book says “a sharp oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Cut the beef into thin, even slices.

  2. Season the slices with gravy, chutney, mustard, vinegar, and chopped, fried onion.

  3. Grease a flat dish.

Layer and bake

  1. Layer the dish with bread crumbs.

  2. Add the beef.

  3. Add brown sauce.

  4. Repeat layers.

  5. Finish with brown sauce on top.

  6. Dredge the top with bread crumbs.

  7. Dot with butter.

  8. Bake in a hot oven at 400°F (200°C) until browned.

Serve

  1. Serve with croutons and tomato butter on the side.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cooked beef
Forms the main body of the dish and provides its substance and flavour.
Bread crumbs
Form a crisp, browned crust over the top of the layers.
Brown sauce
Adds moisture and savoury depth between and over the beef layers.
Gravy from the joint
Moistens the beef slices and carries savoury meat flavour through the dish.
Onion
Adds aroma and savoury sweetness when fried and mixed into the seasoning.

The step that matters

Bake until browned. Cooked beef is already done, so the bake mainly heats it through and browns the crumbs. Too long in the hot oven can dry the meat and toughen the crust, so watch for browning rather than relying on time alone.

Swap the mustard

How well each one fits the dish's main ingredients (beef, tomato, vinegar, onion, pepper, bread, butter):

  1. Capsicumfits better
  2. Potatofits better
  3. Chivefits about as well
  4. Mustardthe original

Fit is the average pairing score against beef, tomato, vinegar, onion, pepper, bread, butter. Candidates are from the same food group and used in at least 100 recipes.
