What each ingredient does

Cucumber
Forms the edible shell that holds the stuffing while it cooks.
Forcemeat or sausage meat
Provides the savoury filling that cooks through inside the cucumber.
Sauce velouté
Coats the cucumber with a thick, smooth sauce that masks its surface.

The step that matters

Simmering the tied cucumber in white stock. Cucumber is mostly water and softens quickly, so simmering gently until just cooked through keeps it intact. Boiling hard can break it apart and let the stuffing leak out.

Swap the cucumber

How well each one fits the dish's main ingredients (meat, sauce):

  1. Mustardfits better
  2. Shallotfits better
  3. Horseradishfits better
