Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Remove the skin and bones from the fish and chop it finely.

  2. In a bowl, combine the fish, mashed potatoes, melted butter, and seasonings.

  3. Press the mixture firmly into a buttered mould.

Bake and serve

  1. Bake in a moderate oven at 350°F (175°C) for 30 minutes.

  2. Turn the mould onto a hot dish.

  3. Rub the hard-boiled egg through a sieve over the dish.

  4. Sprinkle with chopped parsley and serve with the fried bacon around the mould.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Fish
Forms the main body of the casserole and gives it its flavour.
Mashed potatoes
Bind the fish and add moisture and body to the mixture.
Butter
Adds richness and fat, keeping the mixture moist as it bakes.
Hard-boiled egg
Adds a fine, crumbly texture when rubbed through a sieve over the top.

The step that matters

Pressing the mixture firmly into the mould. Firm packing removes air pockets so the casserole holds its shape when turned out and cuts cleanly. Loose packing can cause it to crumble or fall apart on the hot dish.
