What each ingredient does

Lean beef
Forms the main body of the potted meat and gives its savoury, meaty flavour.
Veal
Adds a mild, delicate flavour and a softer, more tender texture to the mixture.
Butter
Adds richness and moisture, and the melted layer on top seals the meat from air.

The step that matters

Pounding the minced meat until very fine. Fine pounding breaks the meat fibres into a smooth, spreadable paste, so the finished potted meat sets evenly without a grainy or stringy texture.

Swap the nutmeg

How well each one fits the dish's main ingredients (beef, veal, pepper, butter):

  1. Parsleyfits better
  2. Sagefits better
  3. Tarragonfits about as well
