Of Veal

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 400°F (200°C).

  2. Braise the bacon, carrots, and bay leaves in the oven until browned.

  3. Remove from the oven and transfer to a stew pot.

  4. Slice the carrots and add them to the pot along with onion, bay leaves, pepper, and salt.

  5. Cover with stock and simmer for 1 to 2 hours.

  6. Strain the mixture, thicken the gravy, and brown it.

  7. Pour the gravy over the veal and serve with cut lemon.
