Meat Dishes

Ingredients

Directions

  1. Wash the cabbage and soak it in cold water with salt for 10 minutes.

  2. Prepare the vegetables: scrape the carrot and parsnip, peel the turnip thickly, wash and trim the leek and celery, and peel the onions.

  3. Bring water to a boil for the soup, then add all the vegetables except the cabbage, along with the herbs and seasoning.

  4. Simmer very slowly for 1 hour.

  5. Add the cabbage and continue to simmer for another 30 minutes.

  6. Remove the string from the meat and place it on a hot dish with the vegetables around it.

  7. Serve the broth separately.
