What each ingredient does

Hominy
Forms the body of the dish; its starch softens and thickens as it simmers in water.

The step that matters

Cook gently and stir occasionally. Hominy is rich in starch that settles and scorches on the base of the pan over strong heat. Gentle heat and regular stirring keep it from sticking and burning while the kernels soften through.
