What each ingredient does

Leg of beef
Provides the main protein, which becomes tender during long, gentle simmering.
Onions
Browning in dripping builds sweetness and savory depth in the stew's base.
Dripping
Fat for frying that carries flavor and browns the meat and onions.
Flour
Thickens the cooking liquid into a smooth, body-rich gravy when heated.
Carrots
Add sweetness and body as they soften during the final hour of cooking.
Turnip
Adds mild earthy flavor and soft texture as it cooks in the stew.

The step that matters

Stirring the flour paste into the stew. Flour mixed with cold water first forms a smooth paste that disperses evenly. Stirring until the liquid boils activates the starch so the gravy thickens without lumps.

Swap the onion

How well each one fits the dish's main ingredients (beef, carrot, turnip, flour, pepper):

  1. Parsnipfits better
