Stewed Cabbage

Ingredients

Directions

Prepare the cabbage

  1. Remove the outer leaves and some of the stem from the cabbage, then wash and drain it well.

  2. Cut the cabbage into pieces like lettuce for salad.

  3. In a saucepan, bring water to a boil, add 1 teaspoon of salt, then the cabbage, and boil uncovered for 20 minutes.

  4. Strain the cabbage in a colander and press out excess water with a spoon.

Stew

  1. Melt the dripping in a stewpan, then add the pepper and remaining salt.

  2. Add the cabbage and stir over heat until nearly dry.

  3. Mix in the flour, then gradually add the stock, water, or milk, stirring to avoid lumps.

  4. Gently stew the mixture for 1 hour, stirring often to prevent burning.

Serve

  1. Pour into a hot vegetable dish and serve.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cabbage
Forms the main bulk of the dish and softens as it stews.
Dripping
Adds fat for richness and helps the cabbage cook without sticking.
Flour
Thickens the cooking liquid into a light sauce as it stews.
Stock, water, or milk
Provides the moist liquid that becomes the stewing sauce.

The step that matters

Gently stew the mixture, stirring often. Flour and liquid thicken as they heat, and the mixture can scorch on the base of the pan. Gentle heat and frequent stirring prevent burning and lumps, giving a smooth, evenly thickened sauce.

Swap the cabbage

How well each one fits the dish's main ingredients (pepper, flour, milk):

  1. Capsicumfits better
  2. Arrowrootfits better
  3. Potatofits better
