  3. Pour the mixture into a pan to cool.

Make the pudding

  4. Serve hot.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tapioca
Swells in the simmering milk and thickens the pudding into a soft, creamy set.
Milk
Forms the liquid base that the tapioca thickens into a creamy custard.
Eggs
Add richness and help bind the pudding as it bakes and sets.
Moist sugar
Adds sweetness and a soft, slightly caramel flavour to the custard.

The step that matters

Simmer the tapioca slowly in the milk. Tapioca needs time and gentle heat to soften and thicken the milk. Rushing it or boiling hard can leave grains firm or scorch the milk on the pan base.

Swap the nutmeg

How well each one fits the dish's main ingredients (milk, egg, sugar, butter):

  1. Cinnamonfits better
  2. Nutmegthe original
  3. Gingerfits less well
  4. Parsleyfits less well

Fit is the average pairing score against milk, egg, sugar, butter. Candidates are from the same food group and used in at least 100 recipes.
