To Pickle Red Cabbage

Ingredients

Directions

Prepare the cabbage

  1. Remove the outer leaves from the cabbage, quarter it, and cut out the thick stalk.

  2. Slice the cabbage thinly into long strips.

  3. In a large basin, reverse a plate and layer the shredded cabbage with a light sprinkling of salt between each layer.

  4. Cover with another plate and place a weight on top to press out moisture.

  5. Let the cabbage sit for 24 hours.

  6. After 24 hours, squeeze the cabbage in a thick cloth without crushing it and place it into jars or bottles.

Make the spiced vinegar and pickle

  1. Boil the spices in ½ pint of vinegar for 15 minutes in an enamelled or preserving pan.

  2. While boiling, pour the spiced vinegar over the cabbage, enclosing the spices in a piece of muslin.

  3. Boil the remaining vinegar and pour it over the cabbage.

  4. Once completely cool, tie the jars firmly with thick doubled paper.

  5. Wait two days before using the pickled cabbage.

What each ingredient does

Cabbage
Forms the crisp, bulky body of the pickle, which softens slightly as it cures.
Salt
Draws out moisture from the cabbage so it stays crisp and firm in the vinegar.
Vinegar
Acidity preserves the cabbage and gives the pickle its sharp, tangy flavour.
Whole allspice
Adds warm, aromatic spice flavour to the pickling vinegar.
Whole pepper
Adds pungent, peppery heat to the spiced vinegar.
Whole ginger
Adds warm, aromatic flavour to the spiced vinegar.

The step that matters

Pressing and salting the cabbage for 24 hours. Salt draws water out of the cabbage through osmosis, so pressing removes moisture that would otherwise dilute the vinegar and make the pickle soggy. Squeezing gently keeps the shreds intact and crisp.

Swap the cabbage

How well each one fits the dish's main ingredients (vinegar, ginger, allspice, pepper, clove):

  1. Capsicumfits better
  2. Mustardfits better
  3. Carrotfits better
  4. Cabbagethe original

Fit is the average pairing score against vinegar, ginger, allspice, pepper, clove. Candidates are from the same food group and used in at least 100 recipes.
