What each ingredient does

Sour apples
Their tartness balances the rich, spiced sauce and softens as they cook.
Onions
Frying them builds sweetness and a savoury base for the curry.
Butter
Fat carries the curry spices and helps the onions and apples brown.
Flour
Thickens the sauce so it clings to the chicken and apples.
Curry powder
Provides the main spice flavour of the dish.
Gravy
Adds liquid and savoury depth to the stewing sauce.
