What each ingredient does

Eggs
Bind the minced hare mixture and give the coating a surface that helps crumbs stick.
Bread crumbs
Absorb moisture and give the mixture body, and form a crisp outer coating when fried.
Hare
Provides the main meat and flavour of the croquettes.

The step that matters

Fry the croquettes in hot fat until golden brown. If the fat is not hot enough, the coated croquettes absorb grease and turn soggy before a crisp, browned crust forms. Enough hot fat seals the outside quickly, helping the crumb coating hold together and brown evenly.
