What each ingredient does

Gooseberries
Provide the main fruit flavour, acidity and juice for the wine.
Sugar
Provides sweetness and the sugar that yeast later turns into alcohol.

The step that matters

Covering and stirring the steeping mixture. Covering keeps the mixture clean while it steeps, and regular stirring helps the hot water draw flavour and juice out of the mashed fruit evenly.
