Why it works: Sugar and apple are a kitchen classic. They rank in the top 18% of all ingredient pairs, and cooks put them together in 16,478 recipes. Both carry beta-damascenone, which smells apple, rose. The science ↓

Boil the juice.
Skim the surface of the juice.
Let the juice cool.
Preserve and jar
Add the whole strawberries to the syrup.
Warm the strawberries gently without boiling.
Remove from heat to cool.
Repeat warming until the strawberries are clear.
Once cooled, transfer the strawberries to jars or glasses.
Pour a little apple jelly over the strawberries if desired.

The flavor team
The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Shared aroma: beta-damascenone (apple, rose).
Sugar and apple barely smell alike, yet cooks put them together in 16,478 recipes: they work on texture and structure more than aroma.
Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Strawberries
- Provide the fruit and flavour that the preserve is built around.
- Sugar
- Sweetens the fruit and draws out its juice, helping preserve it.
- Apple jelly
- Optional addition that adds extra set and helps the preserve keep longer.
The step that matters
Warm the strawberries gently without boiling. Boiling breaks down the fruit and toughens or splits the berries. Gentle repeated warming lets sugar slowly replace water in the fruit, keeping them whole and clear.
