Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 350°F (175°C).

  2. Quarter the pears, peel off their skins, and core them.

  3. Prepare a crust of fine pastry and lay the pears inside.

  4. Sprinkle cloves, beaten cinnamon, and finely chopped Seville orange or lemon peel over the pears.

  5. Add the liquid from baking the pears into the pie.

  6. Close the pie and place it in the oven.

  7. Optionally, after baking, raise the lid on one side and add sugar, rose-water, beaten cinnamon, and red port or brandy, or cream.
