Brewing Table Beer

Ingredients

Directions

The book gives no oven temperature. The 180°F in the steps was added when the recipe was transcribed, as a starting point.

  1. Heat 51.9 gallons of water to 180°F to 212°F (82°C to 100°C).

  2. Add malt and mash for 10 minutes.

  3. Cover and let it sit for 1 hour.

  4. Draw off the first wort.

  5. Add 15 gallons of hot water to the malt and mash for a few minutes.

  6. Let it sit for 30 minutes to 1 hour to form the second wort.

  7. Pour part of the first wort into a pot, add hops, and boil for 1 to 1.5 hours.

  8. Strain the mixture into another vessel.

  9. Draw off the second wort and mix it with the remaining first wort.

  10. Boil the mixture for 1 hour with the hops.

  11. Transfer the worts to shallow coolers until cooled to fermentation temperature.

  12. Combine the cooled worts in a fermenting vat and add 1 quart of yeast.
