Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Isinglass
Sets the milk into a firm, tender gel as it cools.
Milk
Forms the liquid base that carries the almond flavour and sets around the isinglass.
Sweet almonds
Provide the main body, richness and nutty flavour of the dish.
Sugar
Adds sweetness and balances the spices and almond flavour.

The step that matters

Pass the mixture through a sieve. Straining removes almond solids and any lumps so the set blanc-mange is smooth; skipping it leaves a grainy texture.

Flavor stand-ins for the mace

How well each one fits the dish's main ingredients (milk, almond, orange, cinnamon, nutmeg, sugar):

  2. Allspicebetter flavor fit
  3. Clovebetter flavor fit
  4. Macethe original

Fit is the average pairing score against milk, almond, orange, cinnamon, nutmeg, sugar. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
