What each ingredient does

Cream
Adds fat, which makes the ice cream rich and creamy in texture.
Fresh strawberries
Provide the main flavour and colour, and the fruit pulp gives body to the mixture.
Powdered loaf sugar
Sweetens the mixture and lowers its freezing point, keeping the ice cream softer.

The step that matters

Sprinkle plenty of coarse sea salt on the ice and keep turning the pot. Salt lowers the temperature of the ice below water's freezing point, so the cream mixture can freeze. Constant turning keeps ice crystals small and the texture smooth.
