  1. Combine water or vegetable broth, pepper, salt, parsley, green onions, and chopped mushrooms in a stewpan.

  2. Boil over low heat until thick.

  3. Beat the eggs and mix them with the mushroom mixture.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Set and bind the mixture into a firm, sliceable cup as they cook.
Mushrooms
Add savory, earthy flavor and moisture to the filling.
Water or vegetable broth
Provides the liquid that is simmered down with the mushrooms to a thick base.

The step that matters

Boil over low heat until thick. The mushroom mixture must be reduced so it contains little free liquid. Excess water would thin the egg custard and stop it from setting firmly in the cups.

Swap the onion

How well each one fits the dish's main ingredients (pepper, parsley, mushroom, egg, butter):

  1. Shallotfits better
  2. Capsicumfits better
  3. Spinachfits better
  4. Onionthe original

Fit is the average pairing score against pepper, parsley, mushroom, egg, butter. Candidates are from the same food group and used in at least 100 recipes.
