Ingredients

Directions

Prepare

  1. Scrape and wash the carrots, then peel off the red outside.

  2. Chop the onion and add it to a gallon stew‑pan with the carrots and celery.

Cook and strain

  1. Pour in the broth and cover the pan. Cook on low heat for 2.5 hours until the carrots are soft.

  2. If desired, add the bread crumbs and boil for 2–3 minutes.

  3. Rub the mixture through a fine sieve with a wooden spoon, adding more broth to achieve a thick consistency.

Serve

  1. Heat the soup in a clean stew‑pan, season with salt, and serve with toasted bread on the side.

What each ingredient does

Carrots
Form the main body of the soup and give it its sweetness and color.
Broth
Provides the liquid that cooks the vegetables and sets the soup's base flavor.
Onion
Adds savory depth and aroma as it softens in the pot.
Celery
Contributes aromatic flavor that rounds out the soup.
Bread crumbs
Thicken the soup slightly when boiled in, adding body to the purée.

The step that matters

Rubbing the mixture through a sieve. Pushing the cooked vegetables through a fine sieve breaks down their cell walls into a smooth purée. Adding broth gradually lets you reach a thick, even consistency without making the soup watery.

Swap the onion
