Lemon and Liver Sauce

Ingredients

Directions

Prepare the lemon

  1. Pare the rind of the lemon or orange as thin as possible, avoiding the white part.

  2. Cut off all the white and slice the lemon into pieces about the thickness of two half-crowns.

  3. Remove the seeds and cut the slices into small squares.

Make the sauce

  1. Add the lemon squares and minced peel to the prepared liver in melted butter.

  2. Warm the mixture together without boiling.

What each ingredient does

Lemon
Supplies sharp acidity and aroma that cut through the richness of the liver and butter.
Butter
Adds fat and a smooth, rich texture that carries the flavour of the sauce.
Liver
Forms the main body of the sauce, providing savoury flavour and substance.

The step that matters

Warm without boiling. Gentle heat keeps the butter emulsified and the liver tender; boiling can toughen the liver proteins and cause the butter to separate, leaving a grainy, greasy sauce.

Swap the lemon

The recipe marks lemon as optional. How well each one fits the dish's main ingredients (liver, butter):

  1. Applefits better
  2. Grapefits about as well
  3. Lemonthe original
  4. Coconutfits about as well

Fit is the average pairing score against liver, butter. Candidates are from the same food group and used in at least 100 recipes.
