Why it works: Lemon and basil match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and 1,823 recipes mention both. Both carry 3-hexenal, which smells apple, fruity. The science ↓

Brown Sauce

Ingredients

Directions

Make the sauce

  1. In a saucepan, mix flour with a little gravy until smooth.

  2. Gradually add the remaining gravy, stirring well.

  3. Set over low heat and let it simmer for 15-20 minutes, skimming off fat as it rises.

  4. When thickened to the consistency of cream, strain through a fine sieve.

Finish and flavor

  1. For added flavor, mix in pounded liver with butter, mushroom ketchup, lemon juice, lemon rind, port, and cayenne pepper.

  2. Adjust flavor with basil, burnet wine, or tarragon vinegar if desired.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Thickens the gravy into a smooth, lightly bodied sauce as it simmers.
Gravy
Forms the savoury base of the sauce, giving it most of its flavor and volume.
Port or claret
Adds wine acidity and depth that brightens the rich, meaty sauce.
Lemon juice
Adds acidity that sharpens the flavor and balances the richness of the sauce.

The step that matters

Skimming fat during simmering. Fat rises to the surface as the sauce simmers and, if left in, separates and makes the sauce greasy and cloudy. Skimming it as it rises keeps the sauce smooth and clean-tasting.

Flavor stand-ins for the basil

The recipe marks basil as optional. How well each one fits the dish's main ingredients (flour, butter, liver, mushroom, ketchup, lemon, pepper):

  1. Thymebetter flavor fit
  2. Parsleybetter flavor fit
  3. Marjorambetter flavor fit
  4. Basilthe original

Fit is the average pairing score against flour, butter, liver, mushroom, ketchup, lemon, pepper. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
