Why it works: Beef and pork match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 5,690 recipes. Both carry 12-methyltridecanal, which smells tallowy, beefy. The science ↓

  1. Break an egg into a cup and gently slip it into the hot water.

  2. Let the egg sit until the white is set.

  3. Once the water boils again, the egg is ready.

  4. Remove the egg with a slotted spoon.

  5. Trim any ragged edges of the white.

Serve

  1. Serve the poached egg on a slice of toasted bread, with or without butter.

  2. Garnish with fried bacon, broiled beef or mutton, anchovies, pork sausages, or spinach if desired.

What each ingredient does

Fresh eggs
Provide the protein that sets into the tender white and yolk around the cooking water.
Bread
Serves as a toasted base that holds the poached egg and adds crisp texture.
Butter
Adds richness and flavour to the toast beneath the egg.

The step that matters

Let the egg sit until the white is set. Egg white proteins set as they heat, so removing the egg too early leaves it runny and fragile, while waiting too long toughens the yolk and white. Trimming ragged edges after lifting gives a neat shape.

Swap the spinach

The recipe marks spinach as optional. How well each one fits the dish's main ingredients (egg, bread, butter, beef, pork, vinegar):

  1. Potatofits better
  2. Onionfits better
  3. Capsicumfits better
  4. Spinachthe original

Fit is the average pairing score against egg, bread, butter, beef, pork, vinegar. Candidates are from the same food group and used in at least 100 recipes.
