What each ingredient does

Lobster
Provides the main meat and flavour of the sauce.
Butter
Enriches the sauce and, rolled in flour, thickens it.
Gravy
Adds body and savoury depth to the liquid base.
Anchovy liquor
Adds a salty, savoury depth to the sauce.
Lemon
Adds acidity that brightens the rich sauce.

The step that matters

Add the butter rolled in flour to thicken the sauce. Flour coated in butter disperses into the hot liquid and swells as it heats, thickening the sauce. Added directly or unevenly, it clumps; whisking it in while the liquid is hot and then boiling gently lets the starch cook fully and the sauce thicken smoothly.

Swap the mace

How well each one fits the dish's main ingredients (lobster, butter, anchovy, ketchup, horseradish, lemon):

  1. Capersfits better
  2. Parsleyfits better
  3. Tarragonfits better
  4. Macethe original
