What each ingredient does

Crab meat (in the method)
Provides the main flavour and body of the dressing.
Egg yolk
Emulsifies and thickens the mixture as it gently heats, giving a creamy texture.
White wine
Adds acidity and liquid, loosening the mixture and carrying aroma.
Bread crumbs
Absorb liquid and help give the dressing body.

The step that matters

Stirring the egg yolk into the warm mixture. Egg yolk can scramble if it meets too much heat too quickly. Beating it with vinegar first and stirring it in gently over low heat helps it thicken smoothly rather than curdle.

Swap the nutmeg

How well each one fits the dish's main ingredients (white wine, pepper, bread, egg, vinegar):

  1. Tarragonfits better
  2. Parsleyfits better
  3. Marjoramfits better
  4. Nutmegthe original

Fit is the average pairing score against white wine, pepper, bread, egg, vinegar. Candidates are from the same food group and used in at least 100 recipes.
