What each ingredient does

Veal
Forms the main body of the dish, providing protein structure and meaty texture when cooked.
Butter
Adds fat and richness, carrying flavour and giving the hot veal a smooth, glossy texture.
Flour
Lightly coats the veal, helping thicken the cooking liquid and bind it into a cohesive mixture.
Lemon peel
Adds aromatic citrus oils that brighten the flavour of the rich veal.
Bread
Toasted and browned, it adds crisp texture and a roasted flavour contrasting the soft veal.
