Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Whole rice
Cooked soft and beaten smooth, it forms the body of the pudding.
Milk
Cooks with the rice to give a creamy, tender base.
Pounded sweet almonds
Add nutty flavour and richness to the pudding.
Sugar
Adds sweetness and balances the flavour.

The step that matters

Beating the rice through a sieve. Pressing cooked rice through a sieve breaks it down into a smooth, even texture. Leaving lumps gives a grainy pudding that will not set uniformly in the mold.
