Directions

Prepare the chicken

  1. Boil the chicken in 1 quart of water until more than half cooked.

  2. Remove the skin from the chicken.

  3. Cut off the white parts of the chicken when cooled.

Make the panada

  1. Pound the chicken in a mortar with a small amount of the boiling liquid until it forms a paste.

  2. Season the paste with salt, nutmeg, and lemon peel.

  3. Gently boil the mixture, adding more of the boiling liquid to achieve a consistency thicker than cream.

What each ingredient does

Chicken
Forms the paste that gives the panada its body and soft, smooth texture.
Boiling liquid (in the method)
Adds moisture and loosens the paste to a consistency thicker than cream.

The step that matters

Gently boil the mixture to the right consistency. Boiling too hard or too long can toughen the proteins and make the paste grainy or stiff. Adding liquid gradually lets you reach a thick, creamy texture without overshooting.

Swap the nutmeg

How well each one fits the dish's main ingredients (chicken, lemon):

  1. Thymefits better
  2. Marjoramfits better
  3. Rosemaryfits better
  4. Nutmegthe original

Fit is the average pairing score against chicken, lemon. Candidates are from the same food group and used in at least 100 recipes.
